If you have followed my blog for any amount of time, you would know just how much I love avocados! Avocados from Mexico are the most amazing fruit! They are healthy and taste so amazing! I love sharing delicious recipes that you may not have thought about before. I wanted to make something sweet for my kids, but I still wanted it to be healthy, so I decided to make a desert with avocados. Crazy, right? Nope, they LOVE it! I made Coconut Avocado Popsicles to help them stay cool and refreshed this summer, while still eating something healthy….well, much healthier than the normal popsicles you buy at the store.

Coconut Avocado Popsicles
Ingredients:
2 Medium Avocados
1/2 cup Coconut Milk
1/4 cup Sugar
1/2 cup Heavy Cream
pinch of salt
Directions:
- Combine all ingredients in a blend and blend until you have a nice smooth texture. It should be a shake-like consistency. If it is too thick, add just a little bit more coconut milk.
- Pour into popsicle molds and freeze for at least 5 hours.
- Enjoy!
It is so easy and tastes SO good. I wasn’t sure how it would turn out, but we tried it right before freezing and my kids were hooked! They couldn’t wait until they were frozen. They kept asking if they were ready yet. For some reason, they all think they it tastes like grapes. I don’t get it, because I think it tastes just like coconut, but whatever gets them to eat it, right? Avocados are very rich, so a little goes a long way. You may want these to be smaller than your normal popsicles.
