Green Chile Chicken Posole

Posole is a year-round staple in our house.  I make it often, but normally make my Green Chile Beef Posole.  I thought it was time for a change after finding the Mazola Sobrecitos.  They offer both chicken flavored and my absolute favorite, tomato flavored.  I use both bouillon to make so many of our favorite recipes.  My husband normally takes the cubes and chops them up into small pieces so they will dissolve quickly and not leave big chunks of salty bouillon in the food.  Using the Mazola Sobrecitos saved us that step.  It is already in little granules so it dissolves really quickly…almost instantly.  They taste just like the normal bouillon that I have used for years, but are so much more convenient.

I decided that since these are chicken flavored, it was time to alter our favorite posole and change it to chicken.  Green Chile Chicken Posole was born and was instantly a family favorite!  My son normally doesn’t eat posole and he ate an entire bowl!  Here is the recipe:

Green Chile Chicken Posole

Ingredients: 

Shredded Chicken (I used cans of cooked chicken, it shreds easier for me and is ready to use!)

Posole (Locally they sell frozen, but if that isn’t available you can use canned posole, or hominy)

1 Small Chopped Onion

Green Chile (NM is known for it’s Hatch Green Chile, so I keep it in the freezer at all times…you can use canned if it isn’t available in your area)

1 Clove Minced Garlic

2 Mazola Sobrecitos Chicken Bouillon

2 Mazola Sobrecitos Tomato Bouillon

Water

Directions:

In a large pot, add posole (hominy), chicken, onion, garlic and green chile.  Cover with water.  Stir in your Mazola Sobrecitos and heat to boiling.  Reduce heat to simmer and allow to cook until hominy has “popped” or is tender.  This always requires a taste test in our house!

 

It’s really easy to make, and one pot will feed a large amount of people.  I like to make a large pot and it gives my husband enough to take for work for lunch all week.  Delicious recipe that doesn’t a fortune and feeds an army!  Perfect in my book!
