Arroz con Leche aka Sweet Rice

When I make rice, I always make a lot.  I think it’s because I don’t think it looks like enough.  I always make a lot and we end up with a lot left over.  I have been trying to come up with things to make with the left over rice, before it gets hard and I end up throwing it away.  Arroz con Leche (Rice with Milk) may also be known as Sweet Rice.  This is easy to make and you probably have all the ingredients already in your kitchen!

Ingredients: 

2 cups cooked rice

3 cups milk

1/2 cup sugar

1 tsp vanilla extract

1/2 tsp ground cinnamon

pinch nutmeg

 

Directions: 

1. Combine milk, rice and sugar in a medium sauce pan.  Heat on medium.

2. Add vanilla extract, cinnamon and nutmug to mixture.  Heat to boiling then reduce to simmer.

3. Continue to simmer until the milk is absorbed.  This takes about 30 minutes.  If you cook it too long and the mixture gets too thick, add a little extra milk.

4. Serve warm, sprinkle with cinnamon and nutmeg.

    I love rice pudding! Other things I like to do with leftover rice is make a stir fry, or throw it in a soup.
